The story

The original fairy tale ended in sea foam. Ours ends in a nice garlic butter sauce. We consider this an improvement.

This is my 25-minute weeknight dish. It is quick, it is buttery, and it pairs well with avoiding eye contact.

Ingredients

  • 1 lb linguine
  • 1 mermaid tail, mythical, cut into medallions
  • 6 cloves garlic, sliced
  • 4 tbsp butter
  • ½ cup white wine
  • ¼ cup parsley, chopped
  • salt, as salty as an old sea dog

Equipment

  • Large pot
  • Wide skillet
  • Tongs

Method

  1. Boil linguine in well-salted water. ⏱ 10 min
  2. Meanwhile, melt butter in a skillet and cook the garlic until fragrant. ⏱ 2 min
  3. Add medallions and wine; simmer until the sauce thickens. ⏱ 5 min
  4. Toss with pasta and parsley. Serve at once.

Substitutions

  • Linguine: spaghetti is fine.
  • Mermaid: shrimp, if you want it to just be dinner.

Storage and leftovers

Keeps 2 days. Reheat with a splash of water. It may still sing a little in the microwave; this is normal.
