The story
Every coastal town has a chowder. Ours just happens to have a chorus.
This is the recipe I make when the fog rolls in and the foghorn sounds a little too much like someone calling my name.
Ingredients
- 1 siren, cubed (mythically)
- 4 potatoes, diced
- 1 onion, for the tears you were going to cry anyway
- 4 cups milk
- 2 tbsp butter
- salt and pepper, to taste
Safety
- 1 pair wax earplugs, per cook, non-negotiable
Equipment
- Large pot
- Wooden spoon
- Kitchen chair with rope (see method)
Method
- Insert earplugs. Do not remove them for any reason, including "a beautiful voice calling you to the rocks".
- Melt butter and sauté the onion until soft. ⏱ 8 min
- Add potatoes and siren and cover with milk.
- Simmer gently, stirring now and then. ⏱ 1 hr 15 min
- Ladle into bread bowls. Lash yourself to the mast of your kitchen chair while eating.
Substitutions
- Wax earplugs: foam ones work. Fingers do not; you need them for the spoon.
- Bread bowls: a regular bowl, if you've given up.
Storage and leftovers
Better on day two, once it has stopped harmonizing. Reheat gently and do not let it boil, or it starts on the high notes.
