The story

Some of the best things in a mermaid kitchen come from the pantry, not the platter. Roe and siren milk are the luxury end of the business.

The roe glows faintly. Nobody knows why. It is delicious anyway.

Ingredients

Blini

  • 1 cup buckwheat flour
  • 1 cup siren milk, or whole milk
  • 1 egg
  • 1 tsp baking powder
  • butter, for the pan

Topping

  • ½ cup siren roe, mythical
  • ½ cup siren-milk crème fraîche
  • 2 tbsp chives, snipped

Equipment

  • Mother-of-pearl spoon (metal spoons make the roe hum)
  • Non-stick pan
  • Whisk

Method

Blini

  1. Whisk flour, milk, egg and baking powder into a smooth batter. Rest. ⏱ 15 min
  2. Drop tablespoons into a buttered pan and cook until bubbles appear, then flip. ⏱ 2 min

Assemble

  1. Top each blin with crème fraîche and a small spoon of roe. Sprinkle chives.

Substitutions

  • Siren roe: salmon roe or lumpfish caviar.
  • Siren milk: whole milk. It won't sing, but neither will your guests.

Storage and leftovers

Roe keeps 2 days on ice. Blini can be made a day ahead and warmed.
